I myself love to buy my smoked ham hocks at Stater Bros. These things are giant sized and I have them put two saw cuts into each one so that they will cook through.

This recipe is done in a crock pot and you just put in the ingredients in the order listed, turn it on and let it cook till the meat falls off the bone. When that happens, pull out the hock, take all the good meat and throw it back into the soup and it is ready to eat once you give it the desired saltiness. I use chicken broth powder myself but you can use most anything.

Recipe courtesy of about.com http://southernfood.about.com/od/crockpotsoup/r/bl17c5.htm

Some of the best Smoked Ham Hocks that I have ever used come from Stater Brothers in the meat department. Have the butcher put two cuts into each one so that they cook through. Lots of great meat and flavor from these!

Zesty Marinated Chicken

Best Ever Stuffed Mushrooms

This
is dedicated to my fallen Hero my Nephew Cory F. Hiltz( RIP) my love, age 20,
Iraq. I made these at his request for his party before he went back. Give them a
try and keep this recipe alive in his honor!

2 dozen mushrooms(the size of a ping pong ball)

2 lg pkgs cream cheese (softened)

1 bunch of green onions diced (only use the green ends)

1 pkg sharp cheddar cheese (finely shreaded)

Mushrooms should be clean, ends snapped off, Remove a good sized scoop from each mushroom using a mellon baller. (Be careful not to make the wall to thin).

Fill each mushroom with stuffing with spoon and make level not rounded on top.

Apply
the cheese by grabbing a good size portion in your fingers and give it a
good pinch to help it stay together as you lay it ontop of each
mushroom.

Bake at 350% for about 20-30 minutes. When you see the juices running from the mushrooms, this is a sign that they are done.

Let sit for at least 10 minutes and then nothing else to do but gobble them up!

<!--RADEDITORSAVEDTAG_script type="text/javascript">RADEDITORSAVEDTAGBEGINNING

I was to create something with meat and vegetables and this is what I came up with.

Beef

Broccoli

Onion

Mushroom

Spinach

I simply took the broccoli and put it into a bowl with a couple tablespoons of water and microwaved it for 2 minutes (this was almost to long). The beef had bee grilled for another meal so I just sliced it up and added some spray butter and seasoning of your choice. The spinach comes in a bag and I microwave it for 1-1/2 minutes with a small slit in the bag and that is all it takes. The mushrooms were raw and sliced. Now the onion was from some cabbage that I had steamed so I just cut some thick slivers and used them.

Assembly:

Get a plate, lay down the spinach next the broccoli. sprinkle on the mushrooms, add the beef and lastly layer on the onions.

This is it, I wrapped the plate in plastic and when he got home I microwaved it for a couple minutes till hot and served. It was delicious and met his diet needs for low fat, sodium and more. Simply done can taste great!

Beef Teriyaki Big Mike's Way!

I love when Big Mike is in the mood to do some cooking and tonight he is taking the second half of a London Broil and making Beef Teriyaki.

Lots of beautiful colorful peppers, of course some mushrooms and onions, garlic which he has taught me to slice up instead of dicing and wow, what a difference this makes.

He makes this dish with very little sodium and he sure gets a lot of flavor going on. As of this Thanksgiving I came to the understanding that no one really liked it according to my friend Rachel. I think this is not so as I clearly remember my brothers and sisters going crazy over it and there usually was never enough. I know growing up over the years that my kids used to have me make it any time of the year because they loved it so much.

I will say that I have noticed over the last few years that I have ended up throwing out more and more of it and I will tell you why I think this is. The kids are now older and don't care to get the jello that has wine in it because they now can consume REAL alcohol and it is so much better! Yep, that is what I think the reason is. You can give this a try and see what you think because I still love the taste of it but then again I love jellied cranberry which is one of the ingredients.

1 package of raspberry or black cherry jello
1 tuna size can of crushed pineapple
1 cup of pineapple juice from can and the rest water
1 cup of Manischewitz concord grape or blackberry wine
1 can of jellied cranberry

Mix it all together and use a potato masher or fork to break up the jellied cranberry. Chill and serve.
need to poll my audience for this particular subject matter. What do
you guys think about Rachel Ray? I mean not her cooking in particular
but just her as a human being? Do you like her? Hate her? Couldn’t
care any less about her? Wondering why we are even talking about her in
the first place? The reason I ask this is because I can’t quite figure
out just how I feel about her. I do like her thirty minute meal ideas
because she usually has some really good stuff going on in her kitchen.
The only problem that I have is I just don’t normally have prosciutto
hanging out in my pantry. Some of the ingredients she uses are a little
far fetched to expect normal non chef like people to have in their
homes at any given time. I have not actually watched her talk show so I
can’t make a statement on whether or not I like it specifically. So go
to Satellite TV Deals in Dallas to check out what deals are in your local area and then get on and watch Rachel and come to your own conclusion.

Creamy Roasted Pumpkin Soup

Orange Micro Crush - Musicians Friend

What a cool idea.
