Olive Garden, Make It at Home!

Olive Garden is a place my husband and I enjoy for many reasons. We really like how you get all the soup or salad and bread sticks that you can eat. I think we could just make a meal out of that. I love to get a side of Alfredo Sauce and dip my breadsticks, so yummy! It used to be free, but now you have to pay a lot for a little. All the more reason to make their food at home and you can enjoy a lot for a little.

Have you tried their Zuppa Toscana? Well, let me tell you something, you can’t go wrong with this recipe for Zuppa Toscana. It’s not only super easy it is super delicious. No more fighting the crowds waiting in line at Olive Garden. You can save money and no tipping necessary when you whip up this in your own kitchen. Make pleanty because in my home, they go back for more and more. One bowl of this is never enough so get out you biggest soup pot, and get cooking. Enjoy!

Olive Garden Zuppa Toscana

I like to use the mild sausages these days. If you like to heat things up a bit, go for the spicy Italian. If you are Vegan I have created a recipe just for you so you too can enjoy this awesome soup!

You can’t go wrong with this recipe for Zuppa Toscana. It’s not only super easy it is super delicious.
Ingredients
  • 1 pound Italian sausage (5/6 links) hot or mild
  • 1/4 cup real bacon pieces or 4 slices cut into 1/2 inch pieces
  • 96 ounces water
  • 6 Tabs of Chicken broth by Knorr
  • 2 large russet potatoes, scrubbed and cubed
  • 4 large garlic cloves minced
  • 1 large onion, chopped (slivers)
  • 4 to 6 cups chopped kale (4-6 leaves)
  • 1-1/2 cups heavy cream
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes
Instructions
  1. Brown you sausages in your soup pot then set aside
  2. If using sliced bacon, cook until crisp and set aside
  3. Cook the onions and garlic in the bacon/sausage drippings until the onions are translucent and soft, about 5 minutes
  4. Put in the Vegetable broth cubes by breaking them up into the pot
  5. Pour in the water (I use hot water)
  6. Add in the potatoes and continue to cook on medium heat until potatoes are done
  7. Reduce the heat to a simmer and in the sausages by breaking them up into the pot (bite size pieces.
  8. Once heated through, Mix in the Kale and let simmer until the kale is tender
  9. Add in the cream and let simmer until heated through.
  10. Serve with some freshly grated parmesan cheese

    1. I am so sorry I missed listing that. You add it once the kale is tender to your liking. You can add it at the same time but I like to add it just before serving, giving it maybe 5 minutes to heat through.
