What makes grilled fish so healthy? Fish is low in calories, and even the fattier fish have less fat than red meat. Enjoy higher fat fish, like tuna and salmon, as these types of fish contain Omega-3 fatty acids, which help reduce heart disease.
Like red meat, marinade the fish prior to placing it on the grill. Marinades not only add flavor, but help protect you as well. It is important if you make a marinade, it contain an acid, like fruit juice or vinegar, and oil, like olive oil. The acid in the marinade helps to reduce harmful chemicals by as much as 99 percent. The oil helps the marinade stick to the fish. Marinades made at home are very inexpensive. If you prefer, you can buy a marinade or salad dressing at the grocery store.
Do not worry that you are adding extra fat to the fish with the oil as two things happen. One is the oil keeps it from sticking to the grill. and two is most of the marinade is poured off and not totally absorbed by the fish. So say goodbye to those calories. As the fish cooks, the fat drips off. Adding herbal antioxidants, like basil, mint, oregano, rosemary, sage, and thyme will help reduce the formation of free radicals when they hit the grill.
