Kitchen Universe LLCTired of the same old, same old? Wanna spice up your dinner tonight, but don't want anything too fattening? Well your in luck because there is a delicious Dish that you and your family will enjoy without all the fattening junk.

Today is your lucky day because you are going to learn how to make
Low Fat Chicken Enchiladas. This is a favorite dish for many people! Before you start you will need these ingredients:

1 Pound boneless skinless chicken breast
(or you can use turkey)

2 14 Oz. cans Campbell's Healthy Request Cream of
Mushroom Soup

1 chopped onion

1 diced green chili

1 12 Oz. can evaporated skim milk    

8 Ounces low fat cheddar cheese

1 Package corn tortillas

1 Cup lowfat Monterey Jack cheese

Okay, so now that you have everything that you are going to need, here is what you are going to do next. First start by pre-heating your oven to 350 degrees. Now that, that is done you'll need to shred the chicken and then set it aside.

Next you'll want to heat the rest of your ingredients except for the cheese and tortillas. Pour the cream of mushroom and the evaporated skim milk in a sauce pan, heat and then set aside. Now spray a 9x13in pan with PAM. Heat the corn tortillas, then place the chicken on the middle and add some of the sauce. Roll and place in the pan. Finally top with cheese and pour the remaining sauce over the enchiladas.
